homecanning 456pxSO NOW YOU have a big beautiful garden.  It's producing more food than you can eat in a day or even 3 days.  Tomatoes are going crazy, strawberries are insane and you have more spinach than even Popeye could swallow.  The next step in sustainable gardening is food preservation.  It's not very useful to produce a ton of food if you are unable to consume that volume of food and it all spoils.  One of the most popular methods of food preservation is canning and/or pickling.
